Salted Butter Caramels

I was first introduced to this confection by a regular customer of a restaurant where I used to work. He would bring small bags of these Brittany specialties back with him from France on wine buying trips. It inspired a pilgrimage to the region and I have been making them ever since. Chewy, buttery caramel with local organic hazelnuts and roasted almonds with a generous amount of fleur de sel. Enjoy!
