Wendy Boys – Chocolatier / Pastry Chef / Owner

Wendy Boys is an award-winning, chocolate-loving pastry artist. Following her life-long love for chocolates and the pastry arts, Wendy has apprenticed under world-renowned chocolatiers and designed dessert programs for some of Canada’s top restaurants. Today, Wendy is a well-respected dessert consultant and proud owner of Cocolico, a Vancouver-based company specializing in small-batch, hand-crafted chocolates and dessert sauces.

Inspired by childhood afternoons spent baking with her grandmother in their quaint prairie town and gastronomic adventures in Quebec, Wendy chose to study Culinary Arts at the Southern Alberta Institute of Technology. After graduating with Honours and as Class Valedictorian, she worked at some of Calgary’s best fine-dining restaurants including The Belvedere and Catch.

Upon moving to Vancouver in the fall of 2003, Wendy accepted the position of Executive Pastry Chef at The Lazy Gourmet where she developed a keen appreciation for the catering and retail aspect of the business. In July 2004, Wendy joined Lumière Relais Gourmand as Chef Patisserie and was instrumental in the direction of their world-class dessert program.

Keen to develop her skills further, Wendy participated in several competitions, winning the 2006 Gold Medal at the BC Chef’s Association Salon du Chocolat in the plated dessert category.

Wendyʼs passion for chocolate would take her to Michel Cluizel in Damville, France where she would learn from one of the worldʼs top chocolatiers. In May 2007, Wendy was one of only two Canadians to attend LʼEcole du Grand Chocolat in Valrhona, France on a full scholarship to polish her techniques and flair with chocolate.

Wendy has continued her quest for excellence, doing stages in New York, Montreal and Seattle with some of North Americaʼs most talented and forward-thinking pastry chefs. She now divides her time between consulting for some of Vancouverʼs finest restaurants and running her own chocolate company, Cocolico.
